Distinctly ripe Pyrenees Cabernet with lifted menthol and eucalypt over red berry fruits and subtle cedary oak aromas.
FLAVOUR
Following on from the aromatic expectation, the intense cassis fruit and forest notes dominate the winemaking complexities of oak and fine tannins that together create the flavour persistence.
WINEMAKER’S COMMENTS
The Richardson Series of wines are produced from exceptional batches of grapes identified in the Blue Pyrenees vineyard as having the potential to make an iconic varietal red as a tribute to the late Colin Richardson, whose signature graces the label. These wines are vinified and matured separately before confirmation of greatness and preparation for bottling. The 2004 Cabernet Sauvignon is predominantly from 40 year old non- irrigated vines that displayed great intensity of regional and varietal Cabernet characters as they reached optimum ripeness and balance. Vinification included cold soaking pre-ferment, warm ferments in small open vessels and completion of fermentation in oak. Maturation for 24 months in new and 2 year old French oak barriques ensured complexity, smoothness and integration of all flavour components before bottling in May 2006.
